Ingredients

  • 2 cups cooked quinoa
  • 1 tbsp extra virgin olive oil
  • 1 cup roasted pumpkin, cubed
  • ½ cup kale, chopped
  • ¼ pistachios
  • ¼ pomegranate seeds
  • ¼ almond
  • 1 tbsp lemon
  • Pinch of salt

Method

  1. Place quinoa in a serving bowl
  2. Toss pumpkin, kale, pistachios and pomegranate seeds with olive oil, salt and lemon
  3. Add to quinoa bowl
  4. Sprinkle with almonds and enjoy
