Sweet potato is very rich in beta carotene one of the most powerful antioxidants to protect brain cells from degeneration.
It’s also one of the richest sources of vitamin A for eye health. Plus, it makes a post workout food as it helps to reduce inflammation in the body.
Ingredients
- 2 large sweet potatoes, chunked
- 300g spinach
- 2 tbsp rapeseed oil
- Sea salt, to taste
Method
- Place the potato chunks in large oven proof dish and add the oil. Sir the the potatoes around until well covered with the oil, and season with salt.
- Bake in a preheated oven (200c) for around 15 minutes
- Meanwhile lightly steam the spinach
- When all is ready, place on plate or allow to cool and serve with lunch at work the next day with large salad
