Tomatoes contain lycopene which helps to prevent prostate, lung and stomach cancer. It is also found in abundance in watermelon and grapefruit.
Lycopene is more readily available to the body when cooked (as the sugars are more easily absorbed), so you could grill the tomatoes before blending them if you like.
Ingredients
- 1 mackerel fillet (supermarket pre-cooked)
- 2 medium tomatoes
- 1 garlic clove, crushed
- Fresh lime juice
- Handful spinach
Method
- Blend the tomatoes, garlic and lime juice together in a blender to make the compote.
- Place the spinach on the plate, add the mackerel.
- Serve with the tomato compote.
