Mango is rich in potassium and copper, which makes it a superb sports nutrition food.
The potassium helps replenish electrolytes lost through sweat and copper supports healthy nerves and joints.
Ingredients
- 100g Mexican chicken (supermarket pre-cooked)
- Handful rocket
- Mixed beans
- ¼ mango, chunked
- 2 tbsps crème fraîche (Dressing)
- 1 garlic clove, crushed (Dressing)
- ½ tsp English mustard (Dressing)
- Fresh lime juice (Dressing)
Method
- Place the rocket on the plate then add the beans, chicken and mango
- Mix all the dressing ingredients together and then pour over the salad
