This is a superbrain / supersport nutrition meal that can be eaten for breakfast, lunch or dinner.
It’s packed with protein and rich in omega oils to ensure all day energy and stamina.
Ingredients
- 2 eggs
- 2 slices peppered salmon (supermarket pre-cooked)
- 2 thick slices yellow pepper
- Handful walnuts, chopped
- 1 tbsp rapeseed oil
Method
- Heat the oil in a frying pan, place the pepper rings in, and fry off on a low heat for a few minutes.
- Crack the eggs and ‘drop them’ into the pepper rings until they are cooked through (it might be best to cover the pan so they cook well on top too).
- Place the salmon and chopped walnuts on the plate
- Add the egg/pepper rings when ready and serve hot.
