High protein meal
Rich in tryptophan, selenium, iodine, vitamin B2, phosphorus, vitamin B5, vitamin D, for healthy nerves and to reduce stress.
Ingredients
- 1lb beef, goujon strips
- 2 garlic cloves, crushed
- 30g broccoli florets
- 4 shallots, peeled and halved
- 1 small carrot, thinly sliced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 yellow pepper, sliced
- 2 tbsp coconut oil
- 100ml water
- 1 bouillon stock cube
- 2 tbsp cornstarch
Method
- Combine beef, garlic, ginger and soy sauce in a bowl and let it stand
- Heat 1 tbsp of oil in a large non-stick skillet or wok over a high heat, add the peppers, broccoli and shallots, then stir fry for 3 minutes
- Add the water and stir until the water evaporates, then transfer to a plate and set aside
- Add the remaining oil to the pan, add the beef mixture and stir fry for 3 minutes
- Stir together the broth and the cornstarch, add to the meat and stir fry until sauce is thickened, about 3 minutes longer
- Add the peppers, broccoli and shallots back to the pan and cook until heated through, for about 2 minutes. Serve with quinoa
