A protein and iron-rich meaty main meal

When you're pushed for time, it can be tempting to opt for a quick, and usually unhealthy option, such as a ready meal. Instead, go for this quick and easy stir fry, from the six-pack detox plan, which is full of fresh ingredients, tastes amazing, and can be whipped up in around 20 minutes from chopping board to plate.

Beef is an excellent choice for a stir fry, as it offers plenty of protein, and also contains iron, zinc, and B vitamins. Beef is seen as bad for you, as it is high in fat, however nearly half of the fat in beef is a monounsaturated fat called oleic acid, which is actually good for your heart, and is also found in olive oil.

Roasted antipasto peppers are sinfully tasty, but are full of goodness including lots of vitamin C. Red peppers in particular contain phytochemicals and carotenoids which are antioxidant and anti-inflammatory.

Soy sauce can be controversial as its high in sodium, however sodium is used for regulating blood pressure, and has anti-allergen properties. It's also a much healthier source of sodium than salt, and gives the same crisp taste.

Worcestershire sauce is great for your hair, skin, and mood as it's full of vitamin B, which helps build red blood cells, and the onion provides extra vitamin C, amongst other nutrients.

Serving with boiled rice ensures you aren't adding empty calories, and you gain extra iron, copper, manganese and selenium.

Fast food that's good for you, this protein and iron-rich dish is a great option for a quick and tasty evening meal.

Ingredients

  • 500g stir fry beef strips
  • 200g roasted antipasto peppers in oil or vinegar, drained and sliced
  • 2 spring onions, diced
  • 2 tbsps balsamic vinegar
  • 2 tbsps dark soy sauce
  • 2 tbsps Worcestershire sauce
  • Boiled rice

Method

  1. To marinate the beef; place in a medium non-metallic bowl and cover with the vinegar, soy and Worcestershire sauce. Leave for 20 minutes
  2. When the marinated beef is ready; heat a small dry wok until it’s very hot. Tip in the beef, marinade, add spring onions and stir fry for 2 minutes
  3. Add the roasted peppers, then stir fry for a further 2 minutes
  4. Divide the stir fry between shallow bowls and serve with rice
