Energy-boosting banana & peanut butter muffins

Made with brown rice flour, these yummy muffins don’t take you on an energy roller coaster as refined foods do!

High in fibre, brown rice flour is an excellent source of immune-boosting selenium, manganese for bone health, and vitamin B, which helps the body produce energy, and is great for healthy hair, skin and muscle growth.

Not only do bananas add potassium, but they also add a boatload of antioxidants, plus they help to naturally regulate your blood sugar, whilst coconut and dairy-free milk are rich in vitamins and minerals and contain no lactose.

Peanut butter is packed with protein, so it keeps you feeling fuller for longer, whilst also helping muscle development. It's heart-healthy, with most of its fat being of the unsaturated variety, rich in fibre and antioxidants, and helps boost your energy.

This combination of ingredients creates a slow release of glucose into your blood stream, keeping you energised for longer.

Topping these delicious muffins with medjool dates is like sprinkling them with essential amino acids, as well as minerals such copper, potassium, zinc, magnesium, calcium phosphorous, and iron.

Ingredients

  • 1 cup dairy-free milk
  • 3 bananas
  • 1½ cups brown rice flour
  • 2 tbsp. ground flaxseed
  • ¼ cup olive/coconut oil
  • 2 tbsp. desiccated coconut
  • 3 tbsp pure maple/coconut syrup
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 6 tbsp water
  • ½ cup peanut butter (icing)
  • 5 medjool dates, pitted (icing)
  • ¼ cup dairy free milk or water (icing)

Method

  1. Preheat the oven to 180°C
  2. Start by mixing 2 tbsp of flaxseed with 6 tbsp water in a small bowl, and let it sit for 15 minutes
  3. Meanwhile combine all other ingredients in a large bowl and mix until smooth
  4. Add the flax mixture and combine well
  5. Line a muffin tray with 6-8 muffin cases
  6. Pour in the mixture and place in the oven to bake for around 20-30 minutes, until you can insert a sharp knife into the muffin, and it comes our clean
  7. For the icing add all of the ingredients to your blender and blend until smooth. Depending on your blender you may need to add a touch more liquid to help it blend.
  8. Dollop on the muffins and enjoy
