Anti-ageing avocado for beautiful skin and a healthy heart

A favourite of health-foodies everywhere, avocados are an ideal nutritious snack or light lunch.

Well-known for being a good source of healthy fats, avocados are also loaded with vitamins - particularly K and C, with the former helping the body to absorb nutrients. 

The monounsaturated fats help to keep the heart healthy and cholesterol levels low, whilst the antioxidants, such as Lutein and Zeaxanthin, help to repair and restore, improving eye-health.

Avocados also contain vitamin E, which helps to keep skin supple and smooth and reduce premature ageing.

Greek yogurt comprises most of the vitamin alphabet, from A to K, and is also rich in folate. Lactose-free, Greek yogurt also packs in far more protein than milk, and also contains lots of probiotics to boost your immune system and decrease digestion issues.

Cooked tomatoes not only provide a delicious contrasting flavour, they also release their lycopene easier. This is an antioxidant which helps reduce the risk of heart disease, and is actually absorbed by your body more easily when combined with a small amount of fat, making avocado and tomatoes perfect partners.

Coconut oil too is a 'healthy fat' with almost 90% of it's fat being of the saturated variety. It also reduces hunger, making it an excellent weight-loss aid.

Finally, the garlic, chilli and lime juice create a low-fat seasoning, with medicinal properties.

Tasty, filling, full of goodness and a treat for your skin, this is the ideal light lunch.

  

 

 

Ingredients

  • ½ avocado, pitted
  • 3 cherry tomatoes, halved
  • ¼ green chilli, deseed and cut into very fine strips
  • 1 garlic clove, crushed
  • Fresh lime juice
  • 1 tsp coconut oil
  • 2 tbsp Greek yogurt
  • Pepper and salt to season

Method

  1. Season the tomatoes and place under a grill on a medium heat
  2. Mix together the coconut oil, garlic and lime juice
  3. Brush this over the top of the avocado and place under the grill along with the tomatoes
  4. When they are both lightly grilled, place with the tomatoes inside the avocado
  5. Top with the Greek yoghurt and chillies, and serve hot
