Although well-known for being essential for healthy bones, vitamin D also supports the immune system, helping your body to fight off infection and control inflammation.
Neurologist, Dr. Stasha Gominak believes that sleep disorders have reached epidemic proportions because so many people are deficient in vitamin D. As one of the oldest steroid hormones, vitamin D plays a role in influencing our metabolism, our ability to reproduce, and sleep. Lettuce contains a substance called lactucarium or ‘lettuce opium’ that sedates the nervous system and induces sleep.
Ingredients
- 300g Mushrooms, finely chopped
- 1 shallot, diced
- 250ml vegetable stock
- 4 large garlic bulbs, unpeeled
- 100g quinoa
- Handful parsley
- 1 tsp cornflour
- 1 tsp coconut oil
- Salt and Pepper to taste
Method
- Place the garlic bulbs (unpeeled) into a pre-heated oven (200'C) for 10mins
- In a large pan, gently fry off the shallot for a few minutes to soften them
- Add the chopped mushrooms, season with freshly ground black pepper, sprinkle over a teaspoon of cornflour, stir well and cook for a further 2 - 3 minutes, stirring occasionally
- Remove the oven-baked garlic bulbs, allow to cool, peel and add to the pan
- Add the quinoa and vegetable stock and bring to the boil
- Simmer for 15 minutes or until desired consistency
- Allow to cool slightly then blend smooth
- Serve with large lettuce salad
