A spicy salsa, loaded with vitamins and minerals

Tomato salsa is a perfect for adding some heat to meat or vegetarian dishes. With this quick and easy recipe, you can maximise the natural health benefits, without worrying about additives.

An excellent source of  vitamin C, which helps in iron absorption, tomatoes are also rich in a compound called lycopene, which is a powerful antioxidant that helps to reduce free radical damage. Incredibly versatile, and good for you whether raw or cooked, tomatoes also contain potassium, manganese, magnesium, phosphorous, and copper. 

Bell peppers, particularly the red variety, are full of antioxidants, phytochemicals and carotenoids (in particular beta-carotene), which not only gives them their distinctive colours, but promotes healthy eyesight. 

Jalapenos contain capsaicin, a chemical which is a powerful anti-inflammatory, and inhibits a key neuropeptide, Substance P, which transmits pain to the brain. They are also a good source of folic acid and help to improve the nervous system.

Besides being cooling to contrast with the heat of the jalapenos, cucumbers are fantastic for hydration and flushing out toxins, as well as being loaded with skin-friendly vitamins and minerals.

Onions help regulate blood sugar levels, as well as being anti-inflammatory, and lime juice is a natural medicine, which can be used to treat a variety of conditions including peptic ulcers, respiratory disorders, and gout.

A zingy salsa, bursting with flavour and full of goodness, this is the ideal accompaniment to our lean and clean burger.

Ingredients

  • 1 red onions, very finely chopped
  • Fresh lime juice
  • 100g ripe cherry tomatoes, finely diced
  • 2” Cucumber, sliced
  • Mixed bell peppers, sliced and diced
  • 1 jalapeño chilli, deseeded
  • 1 Spring onion, chopped
  • Pinch salt

Method

  1. Mix all the ingredients together in a large bowl and squeeze the fresh lime juice over the top
  2. Season to taste, and place in the fridge to cool and marinade for 30 minutes
