This is a superbrain / supersport nutrition meal that can be eaten for breakfast, lunch or dinner.

It’s packed with protein and rich in omega oils to ensure all day energy and stamina.

Ingredients

  • 2 eggs
  • 2 slices peppered salmon (supermarket pre-cooked)
  • 2 thick slices yellow pepper
  • Handful walnuts, chopped
  • 1 tbsp rapeseed oil

Method

  1. Heat the oil in a frying pan, place the pepper rings in, and fry off on a low heat for a few minutes.
  2. Crack the eggs and ‘drop them’ into the pepper rings until they are cooked through (it might be best to cover the pan so they cook well on top too).
  3. Place the salmon and chopped walnuts on the plate
  4. Add the egg/pepper rings when ready and serve hot.
