A tasty burger to boost your iron

Red meat has a bad reputation when it comes to healthy eating and weight-loss, but lean minced beef is loaded with nutrients, including protein and iron, which will help build a strong body, and boost your energy.

A great source of Vitamin B, which is essential for healthy red blood cells and haemoglobin production, lean beef also contains coenzyme, an antioxidant that protects against free radicals cell damage, and boosts your metabolism.

Adzuki beans are also rich in iron and vitamin B, as well as potassium, fiber and manganese. They also help regulate bowel movements and lower cholesterol, making them the ideal partner to bulk up your lean beef burger.

Use an egg yolk to bind the two together, and you're introducing choline and omega-3 fats into the mix.

Red onions are low in calories, contain no cholesterol and aid digestion, among their many health benefits, whilst French mustard is a good source of phosphorous, folate and vitamin A.

Serve with a small Tomato Salsa Salad for added lycopene and antioxidants.

Ingredients

  • 250g lean minced beef
  • 100g adzuki beans
  • 1 egg yolk
  • 2 tbsps. French mustard
  • 1/2 red onion, very finely chopped
  • 1 tbsp. rapeseed oil

Method

  1. Heat the rapeseed oil and fry off the onion until soft
  2. Put the beef, onions, adzuki beans in a bowl and add the egg yolk and mustard, and mix together
  3. Separate out into 4 balls and flatten them into burger shapes
  4. Place on a baking sheet and leave in the fridge to set for 30 minutes
  5. Griddle or oven bake (180°C) for 20/30 minutes, turning over halfway through to ensure it’s thoroughly cooked
