A delicious vegan soup with added B12

This is a beautifully simple vegan soup, designed to give you a quick energy boost to see you through the cold nights.

Since vitamin B12 is provided almost exclusively by meat and dairy (there are some types of algae which contain low amounts) it is common for vegans to develop a B12 deficiency. 

Engevita B12 yeast flakes are a gluten-free, flavourful supplement, which can be added to soups and stews, used as a topping, or dissolved in milk or juice, to add a cheesy, nutty taste.

The cooked tomatoes release their lycopene quicker, and retain their natural antioxidants, whilst the onions are a fantastic source of disease-fighting polyphenols.

Adding garlic not only gives the soup a lovely rich taste, it's also highly nutritious, anti-inflammatory, and low in calories.

Energy boosting, disease-fighting, hot and delicious, this is the perfect winter warmer for a vegan diet.

Ingredients

  • 5 large tomatoes, halved
  • 1tbsp rapeseed oil
  • 1 onion, finely chopped
  • 1 clove garlic
  • 2 tbsps tomato pesto sauce
  • 1 tbsp Engevita B12 yeast flakes
  • 250ml vegetable stock

Method

  1. Heat the oil in a large frying pan and ‘seal’ the sliced tomatoes
  2. Add the garlic and onions and fry for a further 2-3 minutes
  3. Pour on the stock and cook on high for 5 minutes
  4. Add the yeast and pesto and cook for a further 10 minutes
  5. Place in blender and blend smooth, serve hot
